I love coffee. And I love bacon too. Why not combine the two for a brunch treat you'll return to time again.
One thing I hate is the splatter of bacon grease. So in this recipe, we BAKE it.
Ingredients:
12 slices nitrate free, sugar free bacon, pastured from Crowd Cow.
⅓ cup cooled brewed coffee (Cardiology Coffee!) or espresso
1 Tbsp organic maple syrup, Grade B if possible
2 tsp fresh ground black pepper
Optional: top with fresh herbs such as chives, rosemary, basil after baking
Directions:
Line a deep baking sheet with parchment paper from THIS company. Lay bacon on the sheet in a single layer. In a small bowl, combine coffee and maple syrup and whisk briefly to mix. Brush mixture over bacon and top with pepper. Place in a cold oven. Turn heat to 425 degrees. By the time the oven has preheated, the bacon should be done, or nearly done, depending on crispness desired. Allow bacon to cool for 5 minutes, then remove and place on a paper towel lined plate. Top with fresh herbs as desired. Enjoy!

This sounds good, but doesn’t it splatter grease in the oven? (I’d rather clean the stove-top than the oven)
